Today you gotta have some soup!

    Now I love soup (as you may have been able to tell from this blog), I love making it and eating it! It's filling, full of delicious things that are great for you and perfect for a wintery day like today.

   This soup is quite frankly one of the easiest, tastiest, quickest, nutrient filled soups you can make. So full of beta-carotene and anti-oxidants it could be called health in a bowl! A great mix of carbohydrates and protein coupled with vitamins and minerals, this will warm you up, fill you up a treat and leave you gorgeous and glowing!

  So here it is My Deliciously Healthy Kitchen's sweet potato and red lentil soup:

Ingredients

  •          1 large sweet potato diced
  •          1 cup of dry red lentils
  •          1 large carrot diced
  •          1 red onion diced
  •          4 garlic cloves crushed
  •         1.5 litres of Marigold vegetable Bouillion


Method

Place all of the vegetables and lentils into a large saucepan with the stock.
Bring to the boil and then simmer for 30 minutes.
Blitz and serve!

Top tips

Only add  ½ of the stock and do not blend, serve up as a delicious vegetable stew with some brown rice and some steamed greens.

Add some red Thai paste and ½ a block of creamed coconut to make a sweet and spicy version of the soup or stew.
