Quinoa, the most super of all the superfoods! This ancient grain was a diet staple for the Inca's, who knew a thing or two about using natures most amazing foods. They were pretty partial to cacoa too, chocolate in its raw form that is brimming with anti-oxidants. Anyway I digress, quinoa is packed to the rafters with calcium, iron, vitamin E, several B vitamins and its has almost double the amount of proteins that other grains have. Its better for you than cous cous and I personally think that the flavour and texture are far superior.
So versatile too, it perks up a salad no end or dress it up with some fresh herbs or spices, you can pretty much let your imagination run wild!
Heres one of my favourite things to do with it,
Roughly chop some veggies, drizzle with a little olive oil, season with sea salt and freshly ground black pepper, scatter some fresh oregano and sage and roast!
Roasted veg, goats cheese & warm quinoa salad with a citrus rocket salad.
